Chef Jason Pearce Artisan Pizza :In the Summer of 2001 Pizza Chef Jason Pearce visited Trabia, Sicily the hometown of his great grandparents. While there he was impressed and inspired by the artisan breads and wood Fired Pizza's. When he returned to San Francisco he set out to create an artisan pizza. He did not however, want to replicate or copy the Sicilian pizza to Authentic standards. Knowing what makes Artisan Breads special is It's uniqueness that it's Bakers personality imparts on the finished loafs he wanted to make a pizza that was uniquely San Francisco.
As a child Jason spent numerous hours in the kitchen baking breads and pizzas with his Great Grandparents. " We used to make what most people call Sicilian Pizza a 1 inch thick bread with bits of Anchovies embedded. This topped with a very light almost painted on tomato sauce and a layer of mozzarella cheese. "
